Weekly Menu 9/18 – 9/24

Well, we’re back from our trip to upstate NY and seem to have brought some true fall weather back with us. We never made it out of the 60’s this weekend, which sounds delightful, but the sun never came out either. Post-vacation days plus crummy weather has left me feeling a little glum this weekend, which results in two things when it comes to dinner planning; 1) laziness and 2) comfort food. Alas, it is supposed to get back into the 80’s this week, so I’m trying not to break out the heavier fall meals yet.

Rather, this week will be a mix of some convenient food, and some special occasion food since it’s my husband’s birthday on Thursday. I’ve got fixins for a requested birthday dinner of stuffed peppers, tomato mozzarella and a decadent chocolate cake. Sounds like an excellent way to celebrate the start of the final 365 days in your 20’s to me!

Weekly menu 8/18/11 – 8/24/11

Sunday: Steak, Baked Potatoes and Broccoli
Monday: Sundried Tomato Pesto Pasta
Tuesday: Mom working late- Daddy’s on his own!
Wednesday: Apricot Chicken with green beans
Thursday: Stuffed Peppers with Tomato Mozzarella Salad
Friday: Homemade Pizza
Saturday: Birthday dinner #2 out perhaps?
